Marche is a small mountainous region of Italy, being one day a border of Roman Empire. A word “marca” in Italian means “border”. It is a singing region, and is a homeland to entire galaxy of world famous opera singers and composers: Rossini, Pergolesi, Franco Corelli.
A “sounding” cheese with sweet taste Casciotta D`Urbino DOP by Luigi Guffanti came to De Licateum from this singing region. This cheese is made of fresh sheep’s milk laced with a little of cow’s milk. Legend says that Casciotta D`Urbino was the favorite cheese of Michelangelo and Pope Clement XIV.
